I smell a dinner we (still)need to plan!

Hey Julia, you really want to taste your cheese? Then put away the beer, the wine, the whisk(e)y, whatever and fill your glass with unflavored seltzer.Savor a cheese, then cleanse your palate with the seltzer, repeat. After you've tasted your cheese, have your fill of beer, wine, whisky, whatever along with the rest of the cheese.

I've got a lot to learn about different beers but this is a good starting point for some cheese pairing experiments. I've always naively thought wine was the ideal partner for cheese. You've opened my eyes and curiosity.
