Do you think American versus French oak makes a difference?

Absolutely it make a difference. As does toast level.

When I've come across a cool-climate oaked chardonnay that I've really liked, I've often found out that it was treated lightly with French oak ("lightly" referring to toast, time, or a spot-on transfer to neutral).

Maybe that's possible with American oak, but it's got to be a lot trickier to get the timing right!
